We started with sixteen charpais and a tandoor on the Ajmer highway. We now run four venues and 210 people — on the same rule we opened with.

Our Story

It began with a rule,
not a business plan.

In 1998, Bhanwar Singh Rathore borrowed forty thousand rupees, bought a generator and a clay oven, and put sixteen charpais under a tin roof on the Ajmer highway. He had no hospitality training and no intention of building a company. He had one rule, which he repeated to every person he hired: nobody leaves hungry, and nobody gets served food we would not eat ourselves.

Twenty-eight years later that sentence has produced a fine-dining room, a nine-hundred-seat banquet hall and seven acres of event lawn. It has also produced a staff turnover rate we are quietly proud of, a head chef of nineteen years, and about fourteen lakh meals.

The dhaba is still open seventeen hours a day. The dal still takes eight hours. And the founder still walks into the kitchen at six in the morning to taste it — which, according to his daughter, is now the only part of the job he refuses to delegate.

To make every guest — the trucker at 2 AM and the family of eight hundred at a wedding — feel like the kitchen was cooking for them personally. And to do it at a price that doesn't require them to think twice about coming back.

Our Vision

To be the venue Jaipur defaults to for the days that matter — not because we are the largest or the cheapest, but because in twenty-eight years we have not yet given anybody a reason to look elsewhere.

We cook it ourselves

One kitchen, one brigade, no outsourced catering — not for a wedding, not for a conference, not ever. It is the reason our service times hold when the guest count doesn't.

We remember you

Our maître d' has been here eleven years and our head chef nineteen. Long staff tenure isn't a perk we advertise; it is the entire product.

We put it in writing

Every quote is itemised, every contingency is a clause, and the number on the final invoice is the number we said it would be. No line item appears on the day.

We say no

If a date is too tight, a menu won't hold at scale, or a layout won't work for your guest count, we will tell you before you pay — and lose the booking if we have to.

Twenty-eight years, four venues and one recipe book. Each of these was funded by the one before it — we have never taken outside investment, and we have never had to.

A tin roof and sixteen charpais

Bhanwar Singh Rathore opens a roadside dhaba on the Ajmer highway with one tandoor, a borrowed generator and a rule about nobody leaving hungry.

The garden goes in

The plot behind the dhaba is levelled and planted. Frangipani, lantern light and 90 covers under the open sky — the first time guests start coming for the place rather than the road.

The Gold Room opens

An air-conditioned 84-cover dining room is built on the north side, with a show kitchen behind glass and the first à la carte menu the family had ever printed.

Sheesh Mahal

A 12,400 sq ft pillar-less banquet hall with an antique-mirror ceiling. The engineering brief was one sentence: the back row must see the stage.

Bagh-e-Rajwada

Seven acres alongside the property are acquired and landscaped over eighteen months. The first wedding on the lawn is held in November 2019, for 620 guests.

The second generation takes over

Meera Rathore returns from eleven years in hotel operations and takes over as Managing Director. Her father still checks the dal at 6 AM.

Fourteen lakh meals later

Four venues, 210 people on staff, and the same eight-hour dal recipe. Two national hospitality awards, and a 4.8 average across 2,410 Google reviews.
